What is happening?!

I am sick.  And that is just not fun.  Yesterday I did do a bunch of stuff, but I really think, after how I feel today, that I should have slept more.  :(

BUT!  I did take pics and thought I'd share them with you.  I am not putting them on my site(s) yet... At least not until I get my gals to model them.  They just look better modeled.

Pumpkin Bread

It's been a rather busy week, but I did find time to bake and cook a lot this last Tuesday. I really try to knock out several meals in one day since I have such a late work schedule. I hate the thought that my husband will not be eating a homemade meal if I don't have a bunch of stuff in the fridge...  It's a quirk of mine.  :D

I made a pumpkin cheesecake that I will blog about later because it is simply amazing.  AMAZING.

Here is the pumpkin bread though...  It's a little easier than the cheesecake if you want to attempt something yummy.


Ingredients:
2 1/4 cup all purposed flour
1 T Pumpkin Spice
2 t Baking Powder
1/2 t salt
2 Eggs
2 C Sugar
15 Oz Can Pumpkin
1/2 C Oil
1 C Cranberries


Preheat oven to 350 degrees and grease 2 9 x 5 bread loaf pans.

Mix all dry ingredients in one bowl and the wet in another.  Then add them together just until moistened.  You can add the cranberries, but you don't have to.  I did add walnuts too for some extra texture.  

Evenly pour the mixture in to the pans. They bake for 55-60 minutes and once they pass the toothpick test, they are done!  The edges do get slightly brown, but I like that. You can put tinfoil around the edges if you'd like it less brown....  :D 

Let cool for 10 minutes then remove from pan!

Renaissance Festival

I rode an elephant.  There is not much to say after that.  I never thought I'd ride one, but I did it for love.  My five year old nephew insisted on it... and, well, I'm a good aunt, I guess.

Here are just a few pics of our day together! 


Like a true medieval gent, he ate a giant turkey leg....


And was announced a brave knight that he is... 
(Kids games are fun to watch... He was so proud of his prizes!  Two necklaces.)


If you ever get the chance to journey to a Renaissance Festival, I advise doing it... The food is always great and the entertainment is really fun.  Seeing the more odd costumes is the best really.  :D

Loose

If you've been reading my blog at all lately, you've seen this cowl.  It's my favorite.  (Don't tell the others!)

Since I love it so, I've been recreating it in different colors.  I haven't gone away from the gray though.  I HAVE tried to mix other colors, but I don't like it if it's not gray/silver with another color.  Weird, but true.

Here is a shot of the purple when I was working on it... The bright purple next to the gray is so pretty!  And the gray yarn has a thread of silver metallic through it for a little sparkle!


I'm hoping to do a quick photo shoot with my photographer/cousin Karen next month...  Then they'll be on both of my sites!

Now to go knit that orange and gray one....

I feel like Santa.  No, wait, I don't.  I feel like I'm making a huge list of things I want for Christmas. There, that's better.  I can't stop favorite-ing things on Etsy.

I really like food - Cracked Wheat Bread

I have had some cracked wheat sitting around the house for a while and really didn't know what to use it in.  Yeah, sometimes I buy things and then wonder why.... But I finally found a recipe on allrecipes.com that looked easy enough (and I had all the ingredients).

This Cracked Wheat Bread II was the first one that really caught my eye... And since I had never used cracked wheat before, the easy to follow instructions were essential.  I do have a Kitchenaid stand mixer, so that cut back on the kneading... Though I do enjoy beating the crap out of some dough by hand once in a while.  

I don't know if it was just the weather today or what, but it did rise a little slow. It could have been me when adding ingredients though of course too.  Either way, here is a photo of the two loaves it creates.

When I was almost ready to pop them in the oven, I did cut a slit straight down the center and brushed on some melted butter.  Just delicious!

Then after I was done knitting this lovely cowl....

Yes, a promo shoved in quick, but I just love it!

I needed a snack so I toasted the bread and slathered on some Ginger Pumpkin Jam from Jellybean and Julia's.  It was perfection....

Spotlight - On Our Side

Spotlight on the On Our Side earrings!

I feel like I create a lot of things, but never really get a chance to explain why I make them and why I name them certain ways.... So I'm going to do a Spotlight on certain pieces so you can get a peek into my brain.  :D

This earring design came to me after I had been doing inventory and I realized that I had a bunch of really funky jewelry, but lacked simpler pieces with just a little less sass.  In case there are people out there who aren't as sassy as me....  Or less flashy.  (Note: I can be a bit of a diva. I admit my faults.)

They are still a little long at 2 inches from the earhook, so they have substance, but are sleek since they only have the one strand of the two beads.  I picked four colors that I thought looked amazing next to the antique brass beads and findings.  They translucent beads look amazing, I think.

The name came from a song.  You may have heard it- Time is on my Side by The Rolling Stones! I had this song stuck in my head for a week. It was driving me bonkers, but it fit the earrings.  The vintage feel, but they really won't go out of style.... Time is on your side with these guys.  :D

Knittin' Pretty

I've been knitting like a crazy woman lately!  I'm definitely trying to get a line of baby girl sweaters out and it's coming along nicely. I can't wait to show them off, but for now, here are a bunch of fun knit and crochet things I've made.  They are soon to be on my site!

These earrings are made out of Antiqued Copper and Czech Glass beads. They are 1 3/4 inches from the leverback earhook. Very sweet, simple earrings.  They retail for $10.

Just a little something...

Lately I feel like I've just been knitting and knitting.... Like I'm obsessed.  I'm ok with that, but my hands hate me some days. :P

Just wanted to share this cowl I've been working on.  It's knit with one strand of acrylic and one strand of a metallic, variegated blend.  I love the solid beige with the color mixed in... and add some sparkle, so it's perfect!




Also, I have been working on a line of baby girl sweaters.  I'm just working on designs now and you have to start from scratch, so one down, three in process (mostly in my head).  This 3/4 sleeve, cropped cardi just needs buttons and it'll be done!

No hurry today...

You know, I spent most of my 20's trying to become the person I am now.  I'm still in my 20's at a whopping 29, but I finally feel like I'm where and who I need to be.  I'm happy with my life, my love, work, playtime... And I wish everyone the same happiness.  The struggle to get here just makes the arrival all that much better.

Now on to house buying and kids.  :D  Not that I'm in any hurry for that either....

I'm listing new items on Etsy right now and boiling a chicken for soup or chili or whatever I want it to be...  And listening to music.  Just thought I'd share a song that reminds me to not hurry and to enjoy life!

I really like food - BBQ Chicken Pizza

I figure, since I'm a food addict, that'll I probably just start posting some of my recipes. People ask me for them, so I shall oblige.

I love pizza, whether it's breakfast with egg, dessert with apple, or spicy or supreme or meaty... I'll just eat pizza any way I can get it. I'm cheap though too, so I hate to spend a bunch of money on something I can make at home for next to nothing.

Here's everything I used (minus the cheese as it was hiding in the fridge):



Pizza Dough: I've really been trying to make everything from scratch, since it is so much cheaper overall.  It just takes time.  For now, I'm using store bought pizza crust.  Whichever brand you prefer, just follow the directions about what the temp should be!  This package, for us, since we like thin crust, makes two pizzas!

Sauce: Famous Dave's Rich and Sassy sauce has a special place in our fridge at ALL times.  It's the go-to barbecue sauce for us.  Use whatever sauce you prefer!

Chicken: Ok, roasted chicken was on sale at our local grocery for $5 per bird.  I could have roasted my own but, again time is lacking!  I used exactly one chicken breast for two pizzas (the other one was used for chicken enchiladas the next day).

Add Ons: Usually I add onions and/or bell peppers, but I forgot since I was so obsessed with these Hot Pickled Garlic cloves from Jellybean and Julia's, a local company and friend-owned.  She cans such amazing things and combinations of things that it blows my mind.

Cheese:  I used a whole package (8 oz) of shredded mozzarella on each pizza.


I use my Pampered Chef pizza stone (so worth the monies!) and bake the crust for a few minutes... Not so much to make it super brown, but to get it going.  That way you'll get a nice crust on the bottom and it won't be soggy!



Then I add about two heaping spoonfuls of barbecue sauce.  Joe does NOT like saucy pizza and I'm definitely the same when it comes to BBQ sauce on pizza.


I added half the chicken, a whole chopped clove of the garlic and covered it all in mozzarella cheese.


I really don't set a time since each pizza is unique, but I wait until it's nice bubbly brown in the middle.


The first pizza was delicious...  But I added even more of the garlic (two cloves) to the second one!  There was just something so extra yummy about the little pop of extra flavor of it to go along with the spice of the barbecue sauce and chunks of chicken.

Overall, it took nearly no time to make a wonderful pizza from my own over for less than $7.  Actually make that, 2 pizzas for $7.  And that's just a guess on price... I probably bought the sauce on sale and I know I did the cheese.  :D

P.S. Yes, the other chicken breast went to dinner tonight, but I won't waste ANY of the rest of it either. That'll make soup or stock or chili...  I hate wasting good food!

Brutus and the washcloths

My cat loves me.  He makes it know by constantly being on my lap, standing in front of the TV or meowing loudly from where ever he is in the house.  We still love him. ;)

Today, I was taking photos and he insisted on being part of the photo shoot.

I did pick him up (gently) and place him on some very soft and squishy blankets so he could nap elsewhere.  Then, I continued my photo-taking endeavors.

I always am blown away by how many pics I have to take to get four or five perfect ones for EACH item.  But I love looking through all the pictures and seeing how pretty they are.

Anyways, I shall end my babbling here by saying this- I now have 100% Cotton, Handknit Washcloths in my Etsy shop!  They'll be on my site soon too, so only on Etsy for now!
